I am fortunate that my friend Laurie made all my lunches (and some breakfasts) this week. We have been sharing meals for awhile, but now we are taking turns so we don’t have to cook as often. It’s pretty great to have yummy food that I didn’t have to make! 😀
Snack: (8am) Banana
Breakfast: (9:30-10:30 depending on hunger level)
Ham, Cheddar, & Feta Egg Muffins with tomatoes & blackberries on the side
Pumpkin Pie Oatmeal with pecans & raisins
Apple Cinnamon Oatmeal with walnuts & craisins
Breakfast Sandwich with tomatoes & blackberries on the side
Omelet or Smoothie Pancakes (weekend only)
The egg muffins were made in advance on the weekend. Thanks Laurie! The oatmeals and breakfast sandwiches were made in advance and frozen.
Lunch: (12:30pm) THANKS LAURIE!
Chili (Laurie’s recipe) & Side Salad
Cheeseburger Mac Attack (Hungry Girl recipe) & Side Salad
Apple Butternut Pork Chops
The chili and cheeseburger mac attack recipes were both made in advance on the weekend. The side salads were made in advance and stored in small mason jars. The apple butternut pork chops will be made Monday night for lunch on Tuesday.
Snack: (4:30pm) Apple & String Cheese
Four Cheese Wonton Lasagna
The lasagna was supposed to be made Sunday, but I forgot to thaw out the wontons. The beef for the lasagna was made in advance. I will assemble and bake the lasagna on Monday just before we eat, and I will freeze the leftovers for lunches at a later date.
Apple Butternut Pork Chops
This will be leftovers from the recipe I will make on Monday night.
Bacon Eggplant Grilled Cheese with broccoli on the side
This will be made just before we eat.
BBQ Bacon Cheeseburger with eggplant on the side
The burger patty was made in advance and frozen. I will cook it just before we eat. The eggplant will be leftover from the night before.
Tacos or Taco Salad
I can’t decide which one I will have. I have taco beef and mexican chicken in my freezer for me to choose from. This will be assembled just before we eat.
Chicken Philly Open Faced Sub
This will be made just before we eat. The chicken, peppers, and buns are all in the freezer.
As I’ve mentioned before, my husband and I do not always eat the same thing. On my downloadable meal plan, you can see my dinners along with his. This might be helpful if you also have family members who do not enjoy the same things!
Snack: Grapes, Hot Tea, Fiber One Coffee Cake, WW Mini Bar, Popcorn, Special K Chips, etc…
The evening snack varies quite a bit depending on how many points I have left, how busy I am, and what I’m in the mood for.
This is also the most dangerous time of day for me, so I have to be careful not to over do it.
This week should be much calmer than last week, so I shouldn’t be too stressed out. I tend to feel overwhelmed when I have things going on every night. Having my meals figured out also removes stress because I feel like it’s one less thing to worry about. How do you plan your week to make it less stressful?
